I think translating 優しい to "simple" doesn't do it justice. It goes more in the direction of "graceful" or "elegant". Depending on the situation it can also be translated as being gentle or nice. 優しい人 usually describes a gentle/nice person. 簡単 translates best to "easy", imo. As in "I beat the game, because it was easy."
