I no longer have the option to only work on previously encountered vocabulary in practice. I found this option really helpful. Was it taken away for some reason?

Yes, I disabled that option because there is a possibility that the option can be used to abuse the EXP points.
You can still limit to the items you have encountered by selecting the Level in the settings. Although you will still be getting New items in the level. But if you leveled up and you think you still don't want to move on to the next level, the level option settings can be useful for you.
