Does Japanese have equivalents to '-ing' verbs in English? Ex. "playing," "running," listening," etc. I want to say something like "I was playing a game of Foosball," but the closest I have is 「フーズボールのゲームをしました」which is "I played a game of Foosball."

You can use the -te form + iru to make a continuous "ing" verb, like in the case of 日本語を勉強しています, which means "Studying Japanese"

Ohhh that's interesting. Would the correct sentence then be
    「フーズボールのゲームをしています。」?

You need to make sure that you change the ている into the past tense to create フーズボールのゲームをしていました。
