From what I know, する is the "dictionary form" and is used as "informal" present, while します (~ます Form) is used as "formal" present.

Well, actually, する can be used as informal or plain style I think...

That's right, all the formal/polite speech in Japanese ends with ます or です. I recommend this JLPT5 Grammar course right here:

Its rather difficult even though its the lowest level of Japanese grammar, I've made a lot of mistakes but if you keen reviewing this you'll learn how to compose sentences very well.
