If you're asking why are there kanji you haven't learned yet in the vocabulary lessons, think of it this way: the lessons are structured so that the most basic material comes first. Kanji lessons give you JLPT N5 kanji first. Vocabulary lessons give you the most essential vocabulary first.
For vocab – don't necessarily try to "learn" kanji, for now just get used to how they look and remember the pronunciation.

But what is the prononciation because they give you onyomi and kunyomi prononciations and when I Remember this nervier one of them are in the quiz, it’s loke one of the examples are there instead of the kinyomi and onyomi so which one to I study? Onyomi and kinyomo or the examples??🤷🏾‍♂️

There's 2 types of lessons: vocabulary and kanji.

    For vocabulary lessons:
You should study 3 things: English equivalent, what's written in hiragana, and what kanji are used. As a general rule, the given kanji will use one of the readings given in kanji section. For example 1st word in Level 1 Chapter 1 is 学生, pronounced がくせい, and what you have to learn is the word student in Japanese looks like this「学生」and is pronounced like this 「がくせい」; you don't need to learn all the onyomi and kunyomi for 学 and 生 yet, cause there's a bunch and the words that use them are more advanced.

    For kanji lessons:
Technically, you should try to learn all onyomi and kunyomi readings, at least for the easy kanji they give you first.
Let's take kanji 人 for example. It has bunch of readings, like じん、にん、ひと、り etc. First word you'll probably learn is ひと(人) which means "person". But words like にんげん(人間)、じんるい(人類)、ひとり(一人) that use other readings are all pretty common and you'll have to learn them eventually.
But remembering just the readings with no context can sometimes be difficult, so I usually just learn the full word and then from that I deduce the readings. Eg: I've learned the word 魔法(まほう), now I can with high degree of certainty assume that 法 in 法律 is also pronounced ほう.

    Hope that's helpful.
