ごしゅみはなんですか。 (ご趣味は何ですか。)
ごしゅみ (ご趣味). しゅみ (趣味) on its own means "hobby/hobbies", but when you are talking about the hobbies of the person you are speaking to, you put the polite honorific ご (which is the same as with adding お for things like おかね and おげんきですか).
If you say しゅみ without the ご in front of it, then it might sound like you are just talking about your own hobby. But if you say ごしゅみ, then it's obvious that you mean the hobbies of the person you are talking to because you used the honorific ご.
は. You add the topic particle は "wa" to ごしゅみ, to say that this is the topic/subject of your sentence.
なんですか (何ですか). なん means "what". です (polite version of だ) is basically a linking verb meaning "is". か is essentially just a spoken way of saying a question mark "?".
This です links the subject complement (なん) to the subject (ごしゅみは).
In English we normally say sentences in this order:
1) subect 2) linking verb "is" 3) subject complement.
"My hobby" + "is" + "cycling".
In English questions beginning with "what", the order is different:
1) subject complement 2) linking verb "is" 3) subject 4) ?
"What" + "is" + "your hobby" ?
In Japanese it is usually always in this order instead:
1) subject+は 2) subject complement 3) linking verb "です" 4) か
ごしゅみは + なん + です + か
"(Your) hobby" + "what" + "is" + "?"- Oh thank you
