I get that but why does does it change from ひゃく to (さんぴやく)?- it just does... also look at 600 and 800
Sounds, さんひゃく Sounds odd and harsh. Where as さんびゃくrolls of has a softer more pleasant sound. Same with ろっぴゃく & はっぴゃく

Usually on the 3rd, 6th, 8th and sometimes the 10th count of something there will be irregularities. 300 is read さんびゃく like mentioned above, 600 is read as ろっぴゃく, 800 is read as はっぴゃく and for all the remaining ones you simply add ひゃく after 2, 4, 5, 7 and 9. F.e. 200 is read as にひゃく and so on.- Also note that it is not the same for all the counters so don't use what I said as a basis for everything.
