Do you have to know all levels of kanji to take the test?

If you mean the JLPT level, you have to know at least 100 kanji to take the easiest level, that is, N5. The difficulty and the number of kanji knowledge should be more as you take up higher levels in the ladder. The highest level is N1 for which you should know about 2000+ kanji
