I was just thinking, shouldn't "long hair" technically be 長い髪 instead of 髪が長い, since 髪が長い is pretty much "hair is long"?

that is right , but is more natural to say 髪が長い in Japanese , as it is more natural to say long hair in English.

They're actually both pretty natural though, I think it just depends on what you're trying to say...?

When I was studying English I had some questions like yours.
Long hair in Spanish is "largo (long) cabello (hair)", which sounds good and it's correct but we usually say Cabello Largo (Hair long), maybe in English it sounds awful. So the point is, I think, that the structure depends on the language's syntax. Japanese is a Subject-Object-Verb language

isn't "long" in "hair is long" is noun ?, but 長い is adjective in both sentences , maybe that is why.
