What is the difference between 冷ます(さます) and 冷える(ひえる)?
Feel free to just provide example sentences.

説明 in English is preferable (・^-^・)

冷ます is used when an object cools down (also room temperature)
冷える is used when a person cools down
at least that's what I think. Please correct me if I'm wrong. ^_^

This is actually covered in a book I borrowed from a 9th grader of mine (中学三年生). 冷ます will be used when an object cools down from being hot to room temperature, like taking something out of the microwave and letting it sit because it's too hot, whereas 冷える would be something cooling down below room temperature by being in a refrigerator, or by other methods.
