After learning the vocab from an article, do the words get added to the "practice" or any other review section? Also, is there a way to keep track of articles you've read?

They don't get added to anything. The "Practice" feature uses only all the questions from the Vocabulary Lessons and Kanji Lessons.
You can find all the articles you've read by going on your profile page and clicking on the "Readings" navigation link on the righthand side of the page. Anyone can view this and you can view other people's on their profiles too. Here is a direct link to yours:
