I'm wondering how many others are having this problem I'm having or if I'm the only one.
I have been trying to finish learning my kana (including writing it). However I get frustrated over it and stop only to come back a month or 2 later and repeat it all over again.
I haven't been able to finish kana so I can move on to the rest of the language.

I had a similar problem when I first started learning. I decided to focus on conversation in the beginning due to frustration with the written language. I'd recommend going through the entire Pimsluer series of audio lessons. That's what I did.
But you will need the written language eventually so I recommend using an app on your phone like Anki every day, even if it's only for like 10 minutes.

Do you think the Pimsleur audio lessons are beneficial? I've been considering using audio lessons while I'm driving and I'm not sure what to use.

Definitely! When I went for a long time without using the Pimsluer lessons and then I went back to doing them everyday in the car people started to comment on how my speaking became more fluent. Even if you already know the material on the lessons it's still a great way to practice in my opinion.
