焼きたて covers the fact that the cake is still warm, you don't have use 温かい also, unless you're telling it to a child that doesn't understand that stuff that comes out of a stove is hot.

I didn't mean to use both in the same sentence, but my preference go to 焼きたて. Something else, ホットケーキ is pancakes right?

Yes, "hotcakes" are another word for "pancakes", and Japanese borrowed the former for use.
